Ingredients
- 600 g mostly firm potatoes
- Salt
- 400 g Wiener sausages
- 2 onions
- 1.5 yellow bell peppers
- 1.5 green bell peppers
- 2 tbsp clarified butter
- 1 tsp dried thyme
- 4 eggs

Wash the potatoes and boil them in salted water for about 25 minutes.

Meanwhile, cut the Wiener sausages into small pieces. Peel the onions and slice them into strips. Wash the bell peppers, halve them, remove seeds and white membranes, and cut into thin strips.

Preheat the oven to 200 °C (Oven + fan).

Drain the potatoes, let them steam dry, peel, and cut into bite‑sized pieces.

Heat clarified butter in a pan and quickly sear the potatoes while occasionally tossing. Add onions, bell peppers, and sausages; sauté briefly and transfer everything to a greased baking dish. Crack the eggs over the mixture, sprinkle with thyme and a pinch of salt, then bake for 10–12 minutes. Remove from oven and serve.
