Fried Potatoes with Feta

Ingredients
- 1 kg firm potatoes
- 200 g Feta Cheese
- 4 tbsp fresh thyme
- 2 tbsp butter
- 100 ml whipping cream (min 30% fat)
- Salt
- ground pepper

Wash the potatoes and steam them in a steamer basket for 30–35 minutes until tender. Remove, peel, and let them dry.

Preheat the oven to 220°C with upper and lower heat.

Crush the feta cheese with your fingers. Wash the thyme, shake it dry, and pluck the leaves from the stems. Slice the potatoes into rounds. Grease a baking dish with butter and layer the potato slices in overlapping rows. Pour the cream over them, sprinkle with feta and thyme leaves, season lightly with salt, pepper to taste, and bake for 10–15 minutes until golden brown.
