Ingredients

  • 4 pork chops (with bone)
  • 1 ripe pineapple
  • 125 ml pineapple juice
  • Salt
  • Pepper
  • 2 small red chilies
  • sesame oil
  • leaf lettuce (as desired)

Instructions

    Peel the pineapple, cut it lengthwise into quarters, remove the core and dice the fruit. Wash the chilies, halve them, deseed and slice into very thin strips.

    Heat a grill pan and sear the pork chops on each side without added fat for 3-4 minutes. Season the cooked chops with salt and pepper, drizzle 1–2 tablespoons of oil over them and set aside warm. Pour the pineapple juice into the pan to deglaze, stir to dissolve some of it, add the chili strips, bring to a boil and reduce for 1–2 minutes, then season with salt.

    Plate the pork chops on preheated dishes, drizzle 1–2 tablespoons of the sauce over them, and top generously with pineapple pieces. Garnish with fresh leaf lettuce and serve.
