Fried Parsley

Ingredients

  • 80 g parsley
  • 125 g flour
  • 2 tbsp Cornstarch
  • Salt
  • 100 ml dry white wine
  • vegetable oil (for frying)

Instructions

    Rinse the parsley. Remove the finer shoots and pat them dry.

    In a bowl combine the flour with the cornstarch. Add a pinch of salt, the wine, and enough cold water (about 150 ml) to make a thick batter.

    Dip the parsley in the batter, let excess drip off, then fry portions in hot oil (around 170 °C) for about 1 minute until crisp. Drain on paper towels.
