Ingredients

  • 450 g ready‑to‑eat lobster meat (or substitute shrimp)
  • 1 tsp Cornstarch
  • 2 tsp finely chopped ginger
  • 5 spring onions (finely chopped, only green parts)
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 Egg white
  • 4 eggs
  • 250 ml rapeseed oil
  • 4 slices of white sandwich bread

Instructions

    Cut the lobster meat into about 2 cm pieces and coat with cornstarch. Combine lobster, ginger, spring onions, soy sauce, sesame oil and egg white in a blender and pulse until coarse. Trim crusts from the bread and spread the lobster paste on each slice. Press the paste slightly. Cut each loaf diagonally twice to create four triangles.

    Beat the eggs and heat the rapeseed oil. Dip the triangles into the beaten eggs and fry in hot oil, starting with the lobster side first, until golden brown. Drain on kitchen paper and serve warm with a spicy dipping sauce.
