Classic Caesar Salad

Ingredients

  • 2 slices of white bread
  • 100 ml olive oil
  • 1 Garlic clove
  • 1 lemon
  • 50 g Parmesan
  • 2 tbsp white wine vinegar
  • 0.5 tsp sharp mustard
  • 1 tsp Worcestershire sauce
  • 1 egg yolk
  • Salt
  • Pepper
  • a pinch of sugar
  • 250 g romaine lettuce

Instructions

    Remove the crusts from the bread and cube it. Heat 2 tbsp oil in a pan, fry the bread cubes for 2–3 minutes until golden brown and crispy. Drain on paper towels.

    For the dressing, peel the garlic and squeeze the lemon juice. Grate 10 g Parmesan and combine with 1 tsp lemon juice, garlic, vinegar, mustard, Worcestershire sauce, and egg yolk in a bowl; slowly whisk in the remaining oil to create a creamy emulsion. Add a little water if needed. Season with salt, pepper, and sugar.

    Wash, dry, and tear the lettuce into bite‑sized pieces. Arrange on plates, drizzle with dressing, shave additional Parmesan over the top, and sprinkle with croutons.
