Fried Eggplants

Ingredients

  • 2 Eggplants
  • Salt
  • pepper (ground)
  • flour (for coating)
  • 8 tbsp olive oil
  • 4 Garlic cloves
  • 2 tbsp Red wine vinegar

Instructions

    Slice the eggplants into 0.5 cm thick rounds. Mix flour, salt and pepper; coat each slice in the mixture. Heat olive oil in a pan and fry the slices one by one until golden brown.

    Place the fried eggplants on a plate. Add the vinegar and chopped garlic to the hot oil, bring briefly to a boil, then pour over the vegetables. Let it soak, then serve warm.
