Ingredients

  • 300 g dried chickpeas
  • Vegetable oil for frying
  • 1.5 tsp mild or hot paprika powder
  • 1.5 tsp cayenne pepper

Instructions

    Soak the chickpeas in a large bowl covered with cold water overnight. Drain and pat dry with kitchen paper.

    Fill a deep, cast‑iron pot one third with oil and heat to 180 °C (until a bread cube turns golden brown in 15 seconds). Fry the chickpeas in two batches for 3 minutes each. Remove with a slotted spoon and drain on kitchen paper. Cover the pot slightly during frying as some chickpeas may pop; do not leave oil unattended.

    Reheat the oil. Fry the chickpeas again for 3 minutes per batch until brown, then drain. Mix paprika, cayenne pepper and a pinch of salt and sprinkle over the hot chickpeas. Let cool.
