Ingredients
- 4 chicken thighs
- Salt
- freshly ground pepper
- 3 tbsp Flour
- 1 egg
- panko breadcrumbs (for coating)
- olive oil (for frying)
- 2 lemons
Instructions

Lightly pound the chicken thighs to loosen the meat from the bones. Prepare a mixture of salt and pepper and rub it onto the thighs. Then coat them in flour.

Beat the egg and first dip the thighs into it, then coat them in panko breadcrumbs. Press the coating firmly on. Heat olive oil to about 180°C and fry the chicken thighs for 5-6 minutes (or longer depending on size) until crisp and golden brown.

Drain quickly on a thick layer of paper towels and place on preheated plates. Serve with lemon slices. Pair with a robust Italian red wine, such as Chianti.
