Fried Beef in Pastry Dough

Ingredients
- 150 g flour
- Salt
- 2 tbsp medium sharp mustard
- 175 ml milk
- 2 Eggs
- 1 large cucumber
- 120 g sour cream
- 1 tbsp freshly chopped dill
- 1 tbsp Lemon Juice
- pepper (from grinder)
- 600 g cooked tafelspitz
- 2 tbsp freshly grated horseradish
- Vegetable oil for frying

Whisk the flour with a pinch of salt, mustard and milk into a smooth dough. Add the eggs and stir well until the dough is thick and flows from the whisk. Let rest about 10 minutes.

Wash the cucumber and slice thinly or shave. Salt it and let drain in water for about 10 minutes. Mix sour cream with dill, salt, lemon juice and pepper; taste and adjust. Fold in the cucumber slices.

Cut the beef into strips and mix with horseradish. Portion the mixture under the pastry dough, remove with a fork, let drip briefly, then fry each portion in hot oil (≈170 °C) for 4–5 minutes until golden brown. Drain on kitchen paper and serve with cucumber salad.
