Beef with Lemon Sauce

Ingredients
- 600 g Tafelspitz
- 1 onion
- 2 Garlic cloves
- 4 cm ginger
- 1 cardamom pod
- 1 star anise
- 2 untreated limes
- 2 kaffir lime leaves
- 1 stalk lemongrass
- 1 chili pepper
- 1 EL sugar
- 1 EL white sesame seeds
- 1 EL black sesame seeds
- 2 EL oil
- Salt

Halve unpeeled onions and garlic cloves, slice ginger. Crush cardamom pod and remove skin. Combine all with star anise and about 1 l water; bring to a boil. Rinse the beef and place it in the seasoned broth. Simmer for about 2.5 h.

Squeeze one lime. Finely chop lime leaves, chili, and lemongrass. Grind everything with sugar and ½ TL salt in a mortar into a paste. Toast sesame seeds in a dry pan, then add to the paste. Add some broth to thin the paste into a citrus sauce; adjust seasoning if needed.

Remove beef, let it cool slightly, then slice thinly. Slice the second lime thinly and arrange on top of the meat, pour lemon sauce over it, and serve.
