French-Style Potato Casserole

Ingredients

  • 800 g waxy boiled potatoes
  • 100 g smoked pork belly
  • 1 onion
  • 1 Garlic clove
  • 160 g Reblochon cheese
  • 200 ml milk
  • 100 g crème fraîche
  • Salt
  • Pepper (from the grinder)
  • Nutmeg (freshly grated)

Instructions

    Preheat the oven to 220°C with top and bottom heat.

    Peel the potatoes and cut them lengthwise into halves or quarters.

    Remove skins from the onion and garlic, finely chop. Whisk milk with crème fraîche, season with salt, pepper, and a pinch of nutmeg.

    Dice the pork belly and fry in a hot pan without oil until crisp. Remove and drain on kitchen paper. Slice the cheese into thin rounds.

    Add potatoes to the pan and cook over medium heat for about 10 minutes. Add onion and garlic, sauté briefly, then stir in the pork belly. Pour milk over, distribute cheese slices on top, and bake in the preheated oven for about 20 minutes until golden. Remove and serve immediately.
