Ingredients

  • 800 g mostly waxy potatoes
  • 600 g apples (sour-fruity)
  • 1 stalk leeks
  • 1 Tbsp freshly chopped thyme
  • olive oil
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 200 ml vegetable broth
  • 150 g mozzarella
  • 4 tbsp grated cheese (e.g., Greyerzer)
  • thyme for garnish

Instructions

    Wash the potatoes and steam them almost fully cooked for about 25 minutes. Peel, let cool slightly, then cut into thick slices.

    Preheat the oven to 180°C fan. Oil a casserole or gratin dish with olive oil.

    Wash the apples, quarter them, remove the core, and slice each quarter into strips. Wash the leeks, clean, cut into rings, and spread on the bottom of the baking dish. Sprinkle thyme over them. Drizzle with olive oil, salt, and pepper. Arrange the potato and apple slices fan‑shaped over the leek bed and drizzle again with olive oil. Season with salt, pepper, and nutmeg. Pour in a little vegetable broth and bake for about 15 minutes. While baking, slice the mozzarella and sprinkle it along with the grated cheese over the gratin. Bake another 10–15 minutes until golden brown. Add more broth if needed. Serve garnished with thyme.
