Apple Cake Without Sugar

Ingredients
- 200 g spelt flour
- 1 tsp Baking powder
- 3 tsp cinnamon
- 150 g walnut kernels
- 120 g Applesauce
- 75 g butter
- 2 eggs (separated)
- 750 g tart apples
- 300 g rosehip pulp
- 3 tbsp soy flour
- 0.5 untreated lemon (zest)

Combine spelt flour, baking powder and cinnamon in a bowl. Roughly chop walnut kernels and add half to the flour mixture. Add applesauce, butter and the two yolks. Mix everything with a whisk into a soft dough.

Grease a springform pan (24-26 cm diameter) if needed, pour in the dough and smooth the surface. Preheat oven to 200°C (180°C; gas: level 3). Peel, quarter and core the apples.

Whisk rosehip pulp with soy flour and lemon zest. Mix the remaining chopped walnuts and apple pieces thoroughly into the fruit mixture. Beat egg whites to stiff peaks, fold gently into the fruit mix, then spread evenly over the dough in the pan.

Bake the sugar-free apple cake in the preheated oven for about 30 minutes. Remove, let cool briefly, release from the pan and serve sliced.
