Fragrant Fennel Celery Salad

- 200 g rhubarb
- 2 pink grapefruits
- 1 yellow grapefruit
- 1 bulb fennel
- 1 stalk Celery
- 1 handful parsley
- 2 tbsp grape seed oil
- 1 tbsp honey
- Salt
- Pepper

Wash and trim the rhubarb. Cut thinner stalks lengthwise into about 5 cm long slivers. Slice thicker stalks into thin rings. Steam the rhubarb in about 100 ml water for 2-3 minutes, remove from heat and let cool.

Peel the grapefruits around with a large knife so only the flesh remains visible. Cut the segments between the membranes out and squeeze the remaining flesh to extract juice.

Wash the fennel, remove stems, pinch off the fronds and set aside. Quarter the bulb, cut off the stalks, and slice the fennel into thin strips. Rinse the celery sticks and cut them into fine rings. Wash the parsley and finely chop it together with the fennel fronds.

Combine the rhubarb with the grapefruits, grapefruit juice, fennel, and celery. Dress with grape seed oil and honey, season with salt and pepper. Fold in the chopped herbs and serve the salad.
