Foil-Wrapped Potato with Herb Quark

The foil-wrapped potato with herb quark from Spoonsparrow is perfect as a dinner for the whole family!

Ingredients

  • 8 firm early potatoes
  • 2 bunches chives
  • 0.5 bunch Parsley
  • 0.5 bunch Basil
  • 400 g quark (20% fat)
  • Salt
  • Pepper
  • 1 tbsp Lemon Juice

Instructions

    Wash the potatoes thoroughly, dry them with a towel, and tightly wrap each in foil. Prick the foil-wrapped potatoes several times with a fork and place them side by side on the oven rack.

    Bake in a preheated oven at 175°C (convection: 150 °C; gas: level 2) for 50–60 minutes depending on size, until tender. Wash, dry, shake off excess moisture, and finely chop the chives, parsley, and basil.

    Stir the herbs into the quark and season with salt, pepper, and lemon juice. For serving, slightly open the foil around each potato or remove them entirely from the foil. Serve the foil-wrapped potatoes with herb quark.
