Kassler Wrapped in Puff Pastry

- 1 kg Kassler (cured)
- 200 g puff pastry (frozen)
- 1 sprig rosemary (small)
- pepper (ground)
- Salt
- 2 egg yolks
- flour (for the work surface)

Preheat the oven to 175°C. Rub the meat with salt and pepper, place it on a cold greased pan and roast in the oven for about 45 minutes.

Let the pastry sheets thaw. On a floured work surface lay them slightly overlapping side by side and roll into a rectangle of about 30 x 20 cm thinly.

Rinse rosemary, shake dry, pluck needles and chop finely. Sprinkle rosemary over the pastry and pepper generously. Pat the roast dry and wrap it with the pastry. Place seam-side down on the cleaned greased pan and brush with beaten egg yolk. Optionally decorate with pastry scraps and bake for another 45 minutes.

Arrange the roast on a plate and serve with vegetables such as Brussels sprouts and carrot mix.
