- 500 g waxy potatoes
- 1 onion (diced)
- 1 tbsp oil
- 200 ml dry white wine
- 0.8 l vegetable broth
- 100 ml heavy cream
- 2 tbsp crème fraîche
- Salt
- ground pepper
- a splash of lemon juice
- 100 g smoked salmon (cut into strips)
- dill sprigs (for garnish)

Peel and dice the potatoes, then sauté them with the diced onion in hot oil. Deglaze with white wine and broth, cover, and simmer gently over low heat for 25-30 minutes.

Puree the mixture, then stir in cream and crème fraîche. Season with salt, pepper, and lemon juice. Before serving, whisk to a frothy consistency and ladle into bowls or cups. Arrange salmon strips on top and garnish with dill.
