Flan with Wild Garlic and Peas

- 1 Shallot
- 200 g frozen peas
- 30 g Butter
- 600 g whipping cream
- Salt
- Pepper (freshly ground)

- 8 sheets white gelatin
- 150 g yogurt
- 30 g wild garlic leaves

Instructions

Peel and finely dice the shallot. Sauté peas with the shallot in butter. Pour in 400 g cream and simmer for about 5 minutes. Season with salt, pepper, and nutmeg.

Soak gelatin sheets in cold water, then squeeze out excess liquid and dissolve them in the hot pea mixture that is no longer boiling; let cool.

Wash wild garlic, shake dry, and finely chop. Whisk yogurt until smooth. Beat remaining cream to stiff peaks and fold into the pea mixture with the wild garlic. Fill portion cups and refrigerate for 3–4 hours.

For serving briefly immerse in hot water and pour onto a plate; serve with a small salad, wild garlic, orange slices, and smoked salmon.
