Flammkuchen with Rocket

A thin, crusty tart from Alsace, made with whole wheat flour, perfect for a healthy gut.

Ingredients

  • 400 g whole wheat flour
  • 40 g olive oil (4 tbsp)
  • Salt
  • 1 tsp black peppercorns
  • 200 g Cream cheese (13% fat)
  • 40 g rocket
  • 120 g turkey ham (very thin slices)

Instructions

    Add flour, oil, 250 ml water and ½ tsp salt to a bowl and knead with hand mixer attachments until smooth.

    Roll dough on parchment paper to match the baking tray size. Transfer to the tray.

    Coarsely crush peppercorns in a mortar.

  4. 4.

    Mix cream cheese with crushed pepper and a pinch of salt. Spread over dough and bake in preheated oven at 225 °C (fan: 200 °C, gas: level 3–4) on the lowest rack for about 12 minutes.

    Meanwhile wash and dry rocket. Cut ham into rough pieces.

    Remove tart from oven, lift with parchment. Top with rocket and ham. Slice into eight portions and serve.
