Flammkuchen with Beets and Plums

Beets and plums flammkuchen from ➸ Spoonsparrow are not just great for dinner!

Ingredients

  • 410 g Durum wheat flour Type 1050
  • 1 packet active dry yeast
  • salt
  • 50 g Margarine
  • 1 tsp Honey
  • 2 sprigs Thyme
  • 200 g goat cheese
  • pepper
  • 2 Beets
  • 2 green onions
  • 4 red plums
  • 100 g Halloumi
  • 50 g Walnuts
  • 4 tbsp Canola oil

Instructions

    Knead 400 g flour, yeast, 1 tsp salt, margarine, honey and 250 ml lukewarm water into a smooth dough. Let the dough rise covered in a warm place for about 1 hour until it has doubled in size.

    Dust the work surface with the remaining flour, roll the dough into 4 flatbreads and place them on two baking sheets lined with parchment paper.

    Wash thyme, shake dry and pluck the leaves. Mix half of the thyme with goat cheese until smooth and season with salt and pepper. Peel the beets and cut them into thin slices or shreds. Clean, wash and slice the green onions into rings. Wash plums, halve, remove the pit and cut into wedges. Cut the cheese into small pieces or crumble it. Roughly chop the walnuts.

    Spread goat cheese on the flatbreads. Arrange beet slices, plum wedges and onions on top, then add cheese. Bake in a preheated oven at 220 °C (convection 200 °C; Gas: level 3–4) for about 15–20 minutes until golden brown. Remove each one, drizzle with canola oil and serve sprinkled with the remaining thyme, walnuts and pepper.
