Ingredients

  • 1 orange
  • 2 Garlic cloves
  • 6 tomatoes
  • 3 celery stalks
  • 2.5 tbsp chopped parsley
  • 0.5 tbsp chopped thyme
  • 1600 g pre‑cooked trout fillets (2 trout)
  • 8 large potatoes
  • 150 ml warm milk
  • Salt
  • nutmeg

Instructions

    Peel the oranges and dice the fruit flesh. Peel and finely chop the garlic. Wash the tomatoes, remove the stems, halve them, core and dice. Wash, trim and cut the celery lengthwise into slices. Mix all together and add the herbs.

    Wash the fish, pat dry, season with salt and pepper, and fill with the mixture. Wash the remaining tomatoes, remove the stems and slice them. Tie two string bags on each side, place the fish and tomato slices inside, seal and poke 2–3 holes. Place the bags on a rack and put in a cold oven. Bake at 200 °C for about 40–45 minutes.

    Meanwhile peel the potatoes, cut into small pieces and boil in plenty of salted water until tender; drain. Mash the potatoes with warm milk and season with salt and nutmeg.

    Remove from the oven, lift the fish from the bags and split along the middle spine into fillets. Spread the mashed potato onto four pre‑heated plates, arrange the stuffed fish fillets with tomato slices on top, and serve hot.
