Ingredients

  • 400 g Potatoes
  • Salt
  • 1 Zucchini
  • 10 FRoSTA (fish sticks)
  • 2 tbsp olive oil
  • Pepper
  • a pinch chili flakes
  • 1 Garlic clove
  • 1 Shallot
  • 1 handful mint
  • 400 g FRoSTA (organic young peas)
  • 2 tbsp cream cheese (20 g; 45% fat in dry matter)

Instructions

    Peel and cut potatoes into small pieces. Boil in salted water for 10 minutes until tender. Drain and let cool.

    Meanwhile, peel and wash zucchini, then slice lengthwise into 10 long thin strips using a vegetable peeler. Wrap each fish stick with one zucchini strip. Line the air fryer basket with parchment paper. Place the wrapped sticks in the basket. Brush lightly with oil and season with salt, pepper, and chili flakes. Cook the fish sticks in the air fryer at 200 °C for 12 minutes.

    During this time, peel and finely chop garlic and shallot. Wash mint, shake dry, pluck leaves and chop.

    Heat remaining oil in a saucepan. Sauté garlic and onions over medium heat until translucent. Add frozen peas, cooked potatoes, and 50 ml water; simmer for 8 minutes.

    Add cream cheese and mash everything with a potato masher. Season with mint, salt, and pepper. Remove the fish sticks from the air fryer and serve on top of the pea puree.
