Fish Skewers in Leek Wrap on Mustard Sauce

- 2 sprigs dill
- 5 tbsp mayonnaise
- 3 tbsp crème fraîche
- 2 tbsp coarse-grained mustard
- Salt
- Pepper (freshly ground)
- 1 untreated lemon (juice)
- 200 g salmon fillet (ready-to-cook, skinless)
- 200 g white fish fillet (e.g., stonefish, sea bass, cod, ready-to-cook, skinless)
- 1 stalk leek
- 500 ml vegetable oil (for frying)
- parsley (for garnish)

Wash the dill, shake dry, trim the tips and finely chop. Mix mayonnaise with crème fraîche and mustard; season with salt, pepper, lemon juice and fold in the dill. Chill the sauce until serving.

Meanwhile wash the fish, pat dry and cut into bite-sized cubes. Thread onto wooden skewers, drizzle with lemon juice, season, and let rest for about 20 minutes. Slice the leek lengthwise, rinse, clean, remove dark green parts, and quarter lengthwise. Separate the onion layers and wrap the fish skewers loosely with the leek to create a "wild" appearance.

Heat oil in a pot (it is hot when bubbles rise on a wooden spoon). Fry the skewers all around until golden brown, remove and drain on kitchen paper. Fill small glasses with mustard sauce, place one skewer per glass, garnish with parsley, and serve.
