Ingredients

  • 400 g fish fillet (e.g., plaice, sole, cod)
  • 1 tsp lemon juice
  • Salt
  • Pepper
  • 200 g starch
  • 2 tsp Baking powder
  • 2 egg whites
  • vegetable oil (for frying)

Instructions

  1. 1.

Wash the fish fillet, pat dry and rub with lemon juice. Season with salt and pepper. Cut the fillet into strips about 1 cm wide, roll them up, and skewer each roll with a toothpick to form a coil.

  2. 2.

Heat the fat to 170 °C (in a deep fryer or large pot).

  3. 3.

The third instruction in the original text refers to lychees; it is irrelevant here and has been omitted.

  4. 4.

Whisk the starch with baking powder and 200 ml cold water until smooth. Beat the egg whites stiffly and fold them into the batter.

  5. 5.

Coat the fish coils in the batter and fry them in hot oil portion by portion for 2–3 minutes until golden brown.

  6. 6.

Drain on kitchen paper and serve immediately.
