- 800 g sweet potatoes
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 600 g Broccoli
- 4 Spring Onions
- 4 fish fillets (from Barramundi)
- 2 tbsp butter
- 1 tsp lemon juice

Preheat the oven to 180°C fan.

Peel, wash and cut the sweet potatoes into thick slices. Arrange on a baking tray lined with parchment paper, drizzle with 2 tbsp oil, season with salt and pepper, and bake in the oven for about 25 minutes until golden brown.

Wash, trim and cut the broccoli into florets. Blanch in salted water for about 5 minutes, then shock in cold water and drain. Wash, trim and cut the spring onions into 3-4 cm pieces.

Rinse the fish fillets, pat dry, drizzle with oil, season with salt and pepper, and grill on a hot grill for 3-4 minutes on each side.

Sauté the broccoli together with the spring onions in a hot pan with butter for 1-2 minutes. Season with salt and lemon juice.

Arrange the sweet potatoes and broccoli on plates, place the fish fillets on top, and serve.
