Ingredients

  • 4 fish fillets (ready to cook, skinless, e.g., cod, about 160 g)
  • Salt
  • black pepper (ground)
  • 2 tbsp lemon juice
  • 150 g Ground Almonds
  • 40 g melted butter
  • 100 ml Orange Juice
  • 3 onions
  • 1 tbsp Vegetable oil
  • 1 tin saffron strands (0.1 g)

Instructions

    Preheat the oven to 200°C with upper and lower heat.

    Wash the fish, pat dry, season with salt and pepper, and drizzle with lemon juice.

    Lightly toast the almonds in a pan, remove, let cool, then mix with butter and 3 tbsp orange juice. Peel and dice the onions. Sauté in 1 tbsp oil until translucent, add saffron, and deglaze with remaining orange juice. Transfer to a baking dish, place fish fillets on top, brush with almond paste. Bake in preheated oven for 20-25 minutes.
