Ingredients

  • 4 cod fillets (skinless)
  • 300 g mixed mushrooms (e.g., oyster, chanterelle, button)
  • 1 handful kale leaves
  • 100 ml Vegetable broth
  • 50 ml white wine
  • 12 small potatoes
  • 2 sprigs parsley
  • Salt
  • black pepper
  • pink peppercorns
  • 2 tbsp clarified butter

Instructions

    Peel the potatoes and boil in plenty of salted water for 25-30 minutes until tender. Wash and finely chop the parsley. Clean the mushrooms (rub with kitchen paper) and cut as needed. Wash the kale, blanch in boiling water, shock in cold water, drain, then gently steam in broth with wine until soft.

    Sauté the mushrooms in 1 tbsp clarified butter for 3-5 minutes, seasoning with salt and pepper.

    Lightly salt the cod fillets and slowly brown them in the remaining clarified butter on all sides (about 5 minutes). Season with pepper.

    Drain the potatoes and mix with parsley. Arrange the kale with the mushrooms on warmed plates, add the cod fillets and potatoes, and sprinkle with pink peppercorns before serving.
