Ingredients

  • 4 fish fillets (125 g each)
  • Salt
  • white pepper
  • 1 tbsp lime juice
  • 1 tsp herbs de Provence
  • 3 spring onions (only the white part)
  • 1 apple (Golden Delicious)
  • 1 small red onion
  • 4 Cherry Tomatoes
  • 3 tbsp oil
  • 600 g starchy potatoes
  • 125 ml milk
  • 50 g butter
  • nutmeg
  • rosemary (for garnish)

Instructions

    Peel potatoes, cut into pieces and cook in lightly salted water until tender. Meanwhile trim spring onions and cut into 1–2 cm strips. Peel and chop the red onion. Wash apple, quarter it, remove seeds, and dice. Sauté onion pieces in 1–2 tbsp oil until translucent, add spring onions and apples, continue cooking until onions are just slightly firm. Season with salt and pepper. Halve cherry tomatoes and mix in.

    Heat milk with butter, press cooked potatoes directly into the hot milk, season with salt and nutmeg. Salt and pepper fish fillets, then fry them in 2 tbsp oil on both sides, sprinkle herbs de Provence, drizzle lime juice, and serve atop the mashed potatoes. Top with vegetables and garnish with rosemary.
