Ingredients

  • 1 bundle spring onions
  • 2 bundles arugula
  • 2 cloves garlic
  • 750 g fish fillet (e.g., redfish, halibut or swordfish)
  • Salt
  • ground pepper
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp pine nuts
  • 150 g cocktail tomatoes
  • 1 tbsp Lemon Juice

Instructions

    Clean and wash spring onions, slice into thin rings. Wash arugula, rinse, dry, cut off thick stems, set aside a few leaves, finely chop the rest. Peel garlic and mince.

    Toast pine nuts in a pan without oil, set aside.

    Wash fish fillets, pat dry, divide into portions; season with salt and pepper.

    Cook fish fillets in hot olive oil‑butter mixture in a large skillet over medium heat about 2 minutes per side depending on thickness. Remove and keep warm in a 70°C oven.

    Sauté onions and garlic in the pan for about 4 minutes, stirring frequently, then add chopped arugula and pine nuts, pour in half a cup of water and let simmer gently for another 4 minutes.

    Meanwhile wash tomatoes and quarter them.

    Blend the arugula sauce until smooth, season with lemon juice, salt and pepper.

    Arrange fish fillets on preheated plates, spoon sauce over them, garnish with tomatoes and remaining arugula, and serve.
