Fish Burger with British-Style Coleslaw

Ingredients
- 300 g red cabbage
- 1 tbsp Lemon Juice
- 2 tbsp mayonnaise
- 4 tbsp sour cream (min. 10% fat)
- Salt
- Pepper (freshly ground)
- 4 burger buns
- 1 Spring onion
- 280 g thick fish fillets (e.g., Atlantic cod or haddock), 4 pieces
- spritz of lemon juice

- 1 egg
- 4 Tbsp breadcrumbs
- butter for frying
- lemon wedges for serving

Wash, trim the stem and cut the red cabbage into fine strips. Mix with lemon juice, mayonnaise and sour cream; season with salt and pepper and let rest in the fridge for 30 minutes.

Halve the buns and toast them in a 200°C oven on both sides until golden brown. Clean and slice the spring onion into rings.

Wash the fish fillets, pat dry and drizzle with lemon juice. Season with salt and pepper, dip each fillet in egg, then coat both sides with breadcrumbs. Fry in generous butter over medium heat for 3–4 minutes per side until cooked through.

Spread the coleslaw on one bun half, top with the fried fish fillets, garnish with spring onion rings, place the other bun half on top and serve with lemon wedges.
