Ingredients

  • 2 shallots
  • 2 carrots
  • 150 g celery root
  • 600 g Potatoes
  • 1 sprig thyme
  • 1 sprig marjoram
  • 40 g Butter
  • 1 l poultry broth
  • Salt
  • freshly ground pepper
  • nutmeg
  • 150 g crème fraîche
  • 100 g smoked salmon
  • 4 tsp caviar
  • 4 dill flowers

Instructions

    Peel and roughly chop shallots, carrots, celery root, and potatoes. Wash thyme and marjoram, shake dry and pluck leaves.

    Heat butter in a pot. Add vegetables and herbs and sauté over medium heat for 5 minutes. Deglaze with broth, bring to a boil, then simmer for about 25–30 minutes until tender.

    Blend the soup finely and season with salt, pepper, and freshly grated nutmeg. Stir in crème fraîche until smooth. Slice smoked salmon into strips. Serve portions of the fine potato soup topped with crème fraîche, salmon, caviar, and dill flowers.
