White Asparagus with Boiled Potatoes and Fried Plaice

Ingredients
- 600 g waxy potatoes
- Salt
- 600 g white asparagus
- 1 pinch sugar
- 4 plaice fillets (80 g each)
- flour (for coating)
- 2 tbsp Vegetable oil
- 40 g Butter
- 3 tbsp chopped chives

Wash the potatoes and boil them in their skins for 20-25 minutes in salted water.

Meanwhile, peel the asparagus, cut off 2 cm from the ends, and steam them for about 25 minutes with a pinch of salt and sugar until firm yet tender.

Rinse the plaice fillets, pat dry, season both sides with salt and pepper, roll each into a tight cylinder and secure with a skewer or toothpick. Coat the rolls in flour and fry them in a hot pan with oil and melted butter over medium heat for 4-8 minutes on all sides until golden brown.

Peel the cooked potatoes, arrange them on a preheated plate with the asparagus and plaice rolls, and garnish with chopped chives.
