Fine Herb Soup

Ingredients

  • 30 g Butter
  • 100 g onions (finely chopped)
  • 2 tbsp wheat flour (smooth)
  • 60 ml dry white wine
  • 800 ml clear broth
  • 125 g sour cream
  • 1 tbsp parsley (finely chopped)
  • 1 tbsp chives (cut into rosettes)
  • 1 tbsp lovage (finely chopped)
  • Salt
  • Pepper (freshly ground)
  • nutmeg

Instructions

  1. 1.

    Sauté onions in butter until translucent, dust with flour, deglaze with white wine, pour in broth and simmer for about 7 minutes, then add sour cream and blend everything with a hand blender.

    Add parsley, chives and lovage to the soup, season with salt, pepper and nutmeg.

    Serve the soup in bowls and garnish as desired with dill flowers and chives.
