Ingredients

  • 300 g frozen spinach
  • 600 g longfish fillet
  • 400 ml whipping cream
  • 2 egg whites
  • a splash of lemon juice
  • salt, pepper
  • 200 g Salmon fillet
  • 125 ml white wine
  • 150 g crème fraîche
  • 50 g German caviar
  • salt, pepper
  • Chives

Instructions

    Thaw the spinach and spread it between kitchen paper. Dice the fish fillet and freeze for 20-30 minutes. Blend the fish in a mixer with cream and egg whites. Season with lemon juice, salt, and pepper.

    Preheat the oven to 180°C (Gas: Level 2). Slice the salmon into strips. Layer the fish mixture in an aluminum foil-lined loaf pan with dried spinach and salmon. Fill a fat pan with water, place the pan inside, cover, and cook for about 1 hour.

    Reduce the wine until thickened. Add crème fraîche and simmer until creamy. Taste and adjust seasoning. Fold in caviar. Slice the terrine warm or cold. Serve with sauce and garnish with chives.
