Filetsteaks on Paprika Vegetable

Filetsteaks on paprika vegetable from Spoonsparrow are always wonderfully good.
Ingredients
- Paprika peppers (1 red and 1 yellow each)
- 1 Garlic clove
- olive oil
- 2 tsp Tomato paste
- 100 ml Vegetable broth
- Salt
- pepper (ground fresh)
- 1 tsp dried thyme
- 2 tsp balsamic vinegar
- 250 g beef fillet (center cut)
Instructions

Wash the paprika peppers, halve them, remove seeds and slice into thin strips. Peel the garlic.

Heat 1 tbsp olive oil in a wide pot over medium heat. Sauté the paprika strips for 5 minutes. Add the crushed garlic. Stir in tomato paste, deglaze with vegetable broth, season with salt and pepper. Cover and simmer for at least 5 minutes. Finish with thyme and vinegar.

Spray the remaining oil into a grill pan and heat it. Pat the beef fillet dry and cut into four slices. Sear each side over high heat for 1-2 minutes. Season with salt and pepper, then serve topped with the paprika ragout.
