Filet steak with herb sauce

Filet steak with herb sauce from Spoonsparrow is always a hit.
Ingredients
- 360 g steak (2 steaks)
- 1 Garlic clove
- 20 ml sherry
- 1 tbsp finely chopped parsley
- 1 tbsp finely chopped thyme
- 150 ml meat broth
- 1 tbsp butter
- Salt
- Pepper (freshly ground)
- 2 tbsp oil
- 6 cocktail tomatoes
Instructions

Season the steaks with salt and pepper, then sear them in not-too-hot oil, turning several times for about 8 minutes (shorter or longer as desired). Remove and let rest briefly.

Wash the tomatoes. Peel the garlic clove and finely mince it.

Sauté the minced garlic in the pan drippings, deglaze with sherry and meat broth. Add the tomatoes and reduce slightly. Stir in the herbs, season with salt and pepper. Remove from heat and fold in cold butter.

Serve the steaks with the herb sauce and tomatoes. Optionally serve with a side of leafy salad.
