Figs with Mozzarella

Ingredients

  • 12 figs
  • 0.5 red Batavia lettuce
  • 400 g mini mozzarella balls
  • 0.5 untreated lemon (zest)
  • 4 tbsp balsamic vinegar
  • 1 tsp Honey
  • 4 tbsp rapeseed oil
  • Sea salt
  • mint (for garnish)

Instructions

    Wash figs, pat dry and quarter them.

    Wash, trim, and tear the Batavia lettuce into small pieces.

  3. 3.

    Whisk together balsamic vinegar, honey, and oil. Season with sea salt to taste.

  4. 4.

    Arrange figs, mozzarella, and Batavia on plates. Drizzle dressing over the top. Sprinkle lemon zest and mint leaves before serving.
