Fig, Ham, and Goat Cheese Salad

Ingredients

  • 75 g peeled hazelnuts
  • 250 g mixed greens (e.g., arugula, watercress)
  • 6 figs
  • 200 g fresh goat cheese
  • 160 g ham (8 slices)
  • 30 g liquid thyme honey (2 tbsp)
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • Salt
  • Pepper

Instructions

    Roast the nuts in a pan over medium heat without fat until fragrant, then remove, let cool and roughly chop.

    Wash, trim, dry, and tear the greens into bite‑sized pieces. Clean the figs and cut them into wedges. Crumble the goat cheese coarsely. Slice the ham into thin strips.

    Whisk together honey, lemon juice, and oil for the vinaigrette; season with salt and pepper.

    Toss the greens with cheese, ham, and figs, divide onto four plates, drizzle with vinaigrette, and sprinkle with nuts.
