Feta Spinach Quiche

Ingredients

  • 300 g flour
  • 1 pinch salt
  • 1 egg
  • 200 g butter
  • 1 kg fresh spinach leaves
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 350 g feta cheese
  • 4 eggs
  • 3 tbsp toasted pine nuts
  • flour (for the work surface)
  • butter (for the pan)
  • 1 egg yolk
  • 3 tbsp whipping cream

Instructions

    Mix flour with salt, sift onto a work surface, create a well in the center, crack the egg into it and spread butter around the well. Roughly chop all ingredients with a knife and quickly knead by hand into a smooth dough. Shape into a ball and wrap in cling film; refrigerate for 30 minutes.

    Wash, trim, clean and dry the spinach.

    Peel the onion and garlic, finely chop them and sauté in hot oil until translucent. Add the spinach, let it wilt, season with salt, pepper, and nutmeg, then remove from heat.

    Cut feta into small cubes and mix with eggs and pine nuts into the spinach mixture.

    Preheat the oven to 180°C (356°F) with upper and lower heating.

    Divide the dough in half; roll one portion slightly larger than the pan. Line a buttered tart pan with it, lifting up the edges. Spread the spinach filling evenly on top and smooth.

    Cut the remaining dough slightly larger than the pan, place over the filling, press the edges firmly together. Trim excess, knead together, roll thinly and cut into long, narrow strips.

    Whisk egg yolk with cream and brush the tart surface. Place the dough strips on top, brush again, then bake in the preheated oven for 35-40 minutes. Remove, cool slightly, slice into warm pieces and serve.
