Ingredients

  • 200 g Flour
  • 100 g butter
  • 1 egg
  • Salt
  • flour (for work surface)
  • 500 g fresh spinach leaves
  • 1 onion
  • 1 tbsp Vegetable oil
  • 250 g Roquefort cheese
  • 100 ml whipping cream
  • 100 g walnuts (coarsely chopped)
  • 50 g yogurt
  • 2 Eggs
  • Salt
  • Pepper

Instructions

    Quickly knead the dough ingredients on a work surface. Shape into a ball, wrap in foil and refrigerate for 30 minutes.

    Peel and finely chop the onion; sauté in oil. Wash and trim the spinach, then briefly sauté with the onion.

    Roll out the dough on a floured surface, place it in a greased quiche tin, shaping a rim. Prick the bottom several times with a fork. Blind bake at 180°C (convection) for about 10 minutes. Crumble the Roquefort, whisk with cream, yogurt, and eggs; season with salt and pepper. Spread the spinach over the base. Pour the cheese‑egg mixture over the spinach and sprinkle walnuts on top. Bake in the oven on the middle rack for about 30 minutes until golden.
