Feta on Leek with Chickpeas and Orange Salsa
The feta on leek with chickpeas and orange salsa from Spoonsparrow is perfect as a quick, delicious and healthy evening meal.
Ingredients
- 2 stalks leek
- 4 tbsp olive oil
- Salt
- Pepper
- 265 g chickpeas (canned; drained weight)
- 300 g feta (9% fat)
- chili flakes
- 2 oranges
- 0.5 bunch coriander (10 g)

Clean, wash, and halve the leek lengthwise, then cut into 10 cm pieces. Arrange the pieces side by side in a baking dish. Drizzle with 2 tbsp of oil and season with salt and pepper.

Rinse the chickpeas and spread them over the leek. Cut the feta into 8 pieces, place them on the leek, season with chili flakes, and bake in a preheated oven at 200 °C (180 °C fan; Gas: Mark 3) for 15–20 minutes.

Peel the oranges and cut them into small pieces for the salsa. Wash, dry, and chop the coriander. Mix the remaining oil with the orange pieces and coriander. Season with salt and pepper. Remove the leek with feta from the oven and serve with the orange salsa.
