Fennel Salad with Oranges and Arugula Dressing

Ingredients
- 4 oranges
- 100 ml olive oil
- 50 ml orange juice
- 4 fennel bulbs (200 g each)
- Salt
- Pepper (freshly ground)
- 150 g arugula
- 100 ml olive oil
- 2 tbsp Orange juice
Instructions

Peel the oranges with a sharp knife like an apple, remove all white membranes and cut along the inner membranes to create fillets. Catch the released juice and squeeze out the remaining pulp.

Place the orange fillets in a bowl, sprinkle with pepper and pour over the olive oil. Refrigerate overnight.

Wash the fennel, trim it, halve lengthwise, remove the core and cut into eight pieces.

For the dressing, wash the arugula, shake dry and blend with olive oil and orange juice; season with salt and pepper.

To serve, arrange the fennel and marinated orange fillets on a plate and drizzle with the dressing.
