Green, Young Vegetables from the Wok

Ingredients

  • 500 g Green Asparagus
  • 8 spring onions
  • 500 g young artichokes
  • 500 g baby fennel
  • 2 mild vegetable onions
  • 1 handful young fern tips (from the store)
  • 2 tbsp olive oil
  • Sea salt
  • Pepper (freshly ground)
  • 100 ml dry white wine
  • 5 stems thyme

Instructions

    Peel the lower third of the asparagus. Except for the tips, cut lengthwise in half and slice the stalks diagonally into thirds. Wash, trim, and cut the spring onions into 5-6 cm pieces. Wash, trim, and quarter the artichokes. Wash, trim, and cut the fennel into strips. Peel, halve, and slice the vegetable onions into strips. Rinse the fern and let it drain.

    Briefly sauté the onions in a hot wok with oil. Add the asparagus, spring onions, artichokes, and fennel and brown for about 5 minutes. Cook the fern tips for 1-2 minutes, season with salt and pepper, and deglaze with wine. Sprinkle thyme on top and steam everything together for 2-3 minutes. Taste and serve.
