Coconut Sweet Potato Soup

Ingredients
- 1 onion
- 1 Garlic clove
- 2 cm ginger
- 2 carrots
- 500 g Sweet potatoes
- 100 g Celery Root
- 2 EL vegetable oil
- Salt
- 2 EL curry powder
- 500 ml chicken broth
- 400 ml coconut milk
- 1 handful cilantro leaves
- 2 EL roasted sesame seeds
- red pepper flakes
- 2 EL coconut chips
- 2 EL tahini
- 1 EL lemon juice

Peel and dice the onion, garlic, ginger, carrots, sweet potatoes, and celery root. Sauté everything together in a hot pot with oil for 2-3 minutes until colorless. Season with salt and curry powder. Add the broth and coconut milk, then simmer gently for about 20 minutes.

Rinse the cilantro leaves, shake dry, and finely chop. Mix with sesame seeds, red pepper flakes, and coconut chips.

Stir in tahini, blend smoothly, add more broth if needed or let it reduce slightly. Season with salt and lemon juice to taste.
