Ingredients
- 800 g young fennel
- 2 oranges
- 0.5 tsp brown maple syrup
- 4 tbsp argan oil
- 2 tbsp white apple cider vinegar
- Salt
- 1 Red Onion
- 1 apple
- mint (for garnish)
Instructions

Wash the fennel, halve it, trim off any tough stalks and slice or julienne the halves into thin strips. Set aside some fennel fronds for garnish.

Peel the oranges thoroughly and cut out the segments. Squeeze the remaining flesh to extract juice, then whisk together with maple syrup, oil, vinegar and a pinch of salt. Toss the fennel in the dressing and let it rest for about 15 minutes.

Slice the onion thinly into slivers. Core the apple and slice it into fine pieces. Combine the orange slices, apple, onion and dressed fennel in a bowl, season to taste, then plate on dishes and garnish with fennel fronds and mint.
