Ingredients

  • 0.5 cube fresh yeast
  • 400 g spelt flour type 1050 (+2 tbsp for processing)
  • 0.5 tsp Salt
  • 0.5 tsp whole grain sugar
  • 2 tbsp olive oil

Instructions

    Dissolve the yeast in about 200 ml lukewarm water. Mix the flour with salt and sugar in a bowl, create a well in the center, then add the yeast mixture and oil.

    Knead into a smooth dough by hand. Add more flour or lukewarm water if needed.

    On a floured surface knead vigorously for about 10 minutes, cover, and let rise in a warm place for 1 hour.

    Afterward knead the dough again, shape it into an elongated loaf, dust with flour, place on parchment-lined baking sheet, cover, and rest another 15 minutes.

    Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 30–40 minutes. Remove, cool completely, slice, and serve.
