Ingredients

  • 80 g long-grain rice
  • Salt
  • 2 onions
  • 2 Garlic cloves
  • 4 tbsp oil
  • 250 g mixed ground meat
  • 1 small can peeled tomatoes
  • 2 stalks celery
  • 1 large firm banana
  • 1 tsp lemon juice
  • ground pepper
  • a pinch of curry (and cayenne pepper)
  • 2 tbsp coconut flakes

Instructions

    Cook the rice according to package instructions in salted water.

    Peel and finely chop onions and garlic. Heat oil in a large skillet. Brown the ground meat with onions and garlic for 3-5 minutes. Add tomatoes with their liquid and simmer gently for 10 minutes.

    Wash, rinse, and finely slice celery, reserving the leaves. Peel the banana and cut into slices; drizzle with lemon juice.

    Season the meat with salt, pepper, curry, and cayenne pepper. Stir in the celery and cook for another 5 minutes. Drain the rice if needed and mix in the bananas. Taste again and let it rest for 3-5 minutes. Optionally chop the celery leaves and fold them in lightly. Sprinkle coconut flakes on top before serving.
