Ingredients
- 1 kg salad cucumber
- Salt
- dill (or mint)
- 100 ml apple juice
- Pepper
- 1 apple
- 4 tbsp olive oil

Wash cucumbers, cut into large cubes, season with a pinch of salt in a bowl and let sit for 10 minutes. Wash dill or mint and dry thoroughly; set aside one sprig for garnish.

Blend cucumber cubes with the extracted liquid, apple juice, and remaining dill until very smooth. Strain the mixture through a fine sieve. Squeeze the residue in the sieve to extract as much liquid as possible, transfer to a bowl, season with pepper, and refrigerate.
