Coconut Pudding with Starfruit

Ingredients
- 1.5 cups sugar
- 1 packet vanilla sugar
- 350 ml sweetened condensed milk
- 300 ml condensed milk
- 0.5 cup milk
- 6 large eggs
- 0.5 cup fresh pureed coconut
- coconut flakes (for garnish)
- 1 starfruit

Preheat the oven to 175°C.

Add 1 cup of sugar to a pot and melt over medium heat, stirring until it caramelizes to a light brown. Pour the caramel into the bottom of the ramekins, set aside.

Combine milk, both types of condensed milk, eggs, 1/3 cup sugar, vanilla sugar, and grated coconut in a blender. Blend vigorously for about 3 minutes.

Pour the mixture over the hardened caramel in the ramekins and place them on a deep baking tray.

Add about 1 cm of hot water to the baking tray around the ramekins and bake in the oven for approximately 45 minutes until set.

Remove from the oven and let cool for 20-30 minutes. Then loosen the edges with a knife and transfer to plates.

Best served chilled after refrigerating overnight, topped with coconut flakes and sliced starfruit garnish.
